Cake Storage and Freezing

A cake's shelf life is set by its filling and its temperature, not by the calendar.

What a cake is filled with decides how it must be stored. Cream and custard fillings are perishable: the cake must be held at 2-8 °C and eaten within 2-3 days.

A buttercream-only cake — buttercream filling and finish, nothing perishable inside — keeps 2-3 days at room temperature, as long as the room stays below 25 °C. In hot weather, that condition is the one to watch.

Freezing works for undecorated sponge layers only. Wrapped well, they hold at -18 °C for up to 3 months without damage to the crumb.

Thawing is where a finish is usually lost. Frozen layers should thaw in the fridge for 8-12 hours; a slow, cold thaw keeps condensation off the surface, so icing and fondant go on dry.

Bringing the figures together: a filled cake for a Saturday event should be collected no earlier than Thursday, held at 2-8 °C and served within its 2-3 day window. The order timeline page sets the collection date; the servings chart sets the size.
